| Delicious Pineapple Dessert Recipes 1st Recipe: Pineapple Chess pie

Ingredients:
ü 1 c crushed pineapple, drained
ü 2 c sugar
ü 1 tb cornstarch
ü 1 c coconut
ü 4 eggs
ü 1 stick of margarine
ü 1 ts vanilla
ü 1 pie shell, baked
Method:
Ø Mix all the ingredients
Ø Pour into pie crust.
Ø Bake at 350° 30 to 40 minutes, until done.
2nd Recipe: Pineapple Cake

Ingredients :
ü 8 ounces cream cheese, softened
ü 1/2 cup vegetable oil, such as canola, corn oil, or safflower oil
ü 3 large eggs
ü 1 cake mix (18.5 ounces) butter cake mix with pudding in the mix
ü 1 can (15 1/4 ounces) crushed pineapple, drained
ü 2 tablespoons lemon juice
Method:
Ø Grease and flour a 12-cup Bundt cake pan.
Ø Heat oven to 325°.
Ø In a large mixing bowl with an electric mixer, beat cream cheese with oil and eggs until well blended.
Ø Blend in the cake mix and beat on high speed for 2 minutes.
Ø Beat in drained pineapple and lemon juice.
Ø Spoon into a Bundt cake pan. Bake for 45 to 55 minutes, or until a toothpick inserted in center comes out clean. Cool in pan on rack for 15 minutes.
Ø Carefully invert onto a cake plate to cool completely.
Ø Frost or dust with powdered sugar.
3rd Recipe: Fruit Soup
(Serves 4 to 6)

Ingredients:
ü 1 small pkg. (6 ounces) mixed dried fruit or 1 1/2 cups of your choice dried fruit
ü 1/2 cup raisins
ü 1 small can pineapple chunks with juice
ü 1 large Granny Smith apple, coarsely chopped
ü 3 cups apple juice or orange juice
ü 1 tablespoon lemon juice
ü Cinnamon stick, broken up
ü 2 to 3 whole cloves
ü 1/2 tsp. powdered ginger
ü 1 cup water
Method:
Ø Dump all ingredients into a crock-pot the night before you plan to serve; mix well
Ø Cook on low all night (7 to 9 hours)
Ø Add other frozen or canned fruits, if desired.
Ø Remove cloves and cinnamon stick pieces before serving.
4th Recipe: Pineapple Smoothie
(3 Glasses)

Ingredients :
ü 1 pint vanilla frozen yogurt
ü 1 cup sliced mango
ü 1 cup sliced seeded papaya
ü 1 tablespoon pina colada mix
ü 1/4 cup crushed pineapple
ü 1/2 cup skim milk
Method:
Ø Place all ingredients in blender container; cover.
Ø Blend at medium speed 30 to 40 seconds or until smooth.
Ø Pour into 3 serving glasses; garnish as desired.
